Who am I? This lecture describes my background and how long I have been cooking Indian cuisine.
I will describe how this course is divided and what to expect in each section. There are many different breads, but I will be sharing recipes for 4 different type of breads: roti/chapati, paratha, naan, and puri. These 4 are very popular in North America and found a lot in restaurants.
I will explain why we have such a variety. This will be a bit of a lecture on the history of Indian breads, but also introduce some cultural celebrations when these breads are commonly served. Much of the variety is dependent on what type of spices and ingredients are available in that region. I am going to focus on Indian Bread common in North India.
